During fermentation, I watch for deep, dark color and evolving complexity. The wine is then aged in hand-selected French oak barrels with a medium to heavy toast that complements the rich fruit.The tannins from the fruit intertwine with the oak tannins to create a texture that is both seductive and captivating. This is a wine to be savored and set aside for life’s most significant moments. It is both a celebration and an homage in a bottle.
