Our Honey B Vineyard off of Cuttings Wharf Road in Carneros is a 20 acre parcel planted to Chardonnay, Pinot Noir, Syrah, Merlot and Gewürztraminer. We have owned the vineyard since 2008 and love this cool climate AVA. We have a number of clone and root stock combinations to maximize the diversity and complexity from this region.
Michael named this wine in honor of his father and the style reflects Tom Baldacci’s personality. Filled with life, this sparkling wine has wonderful aromas of ripe pear, green apple and toasted almonds. Flavors of crisp green apple, citrus and toast mingle beautifully with tight, tiny bubbles. The wine finishes long and crisp and is perfect for any celebration.
Michael Baldacci began this project in 2015 with Chardonnay fruit harvested from our Honey B Estate vineyard in Carneros. The style is known as méthode champenoise which means that the wine goes through two fermentations and the non-vintage designation means that the wine is aged on the lees, in the bottle, for at least 15 months.
