A mountain Cabernet Sauvignon from the Diamond Mountain Appellation, this wine is powerful and rich. Rolando Herrera, our winemaker, took the massive fruit flavors and tannins indicative of mountain fruit and has produced a Baldacci Family Vineyards wine that is elegant but with the intense power of fruit that is grown on vines with little soil structure. Hints of mineral, bramble, fig, coffee and concentrated mountain berries fill out the flavors and balance perfectly with the hints of crème brulée on the lingering finish from the aging in 100% French Oak. This wine tastes great now – just imagine what 10 years will bring!! 268 cases produced.

In October we visited the Baldacci tasting room. Having never been there, we did not know what to expect. We tasted several of their Cabs and chose three '07s to ship home, the Napa Valley Stags Leap, the Napa Valley Diamond Mountain, and the Napa Valley Stags Leap Brenda's Vineyard.New Year's Eve, we dined at one of our favorite restaurants in Chattanooga and carried the Diamond Mountain Cab for our festivities. We paired this with a tender beef fillet. The wine was a little young starting out, but as the night progressed, it began showing it's potential. It was a big, bold cab with fruit flavors you would expect from Diamond Mountain and a great smooth finish. If you drink this wine now, decant it for an hour or so before drinking. It should lay down for several years. In fact, I need to order some more to lay down. I am looking forward to trying the other two cabs we chose.
